From Silver Grill to RARE Italian, it's clear that we have no shortage of restaurants in Fort Collins.

But, because we are some hungry people here at Townsquare Media, we wouldn't mind if a few more popped up.

I asked my coworkers which restaurants (and stores, why not?) they would like to see come to Fort Collins.

Here's what we said (in no particular order):

1. Apple

Several of my coworkers mentioned this one, and I agree. The closest one we have currently is in Broomfield, which means that we not only have to cross over to the land of the Buffaloes, but we also have to drive about an hour to get our technology fixed. While this is totally a first-world problem, I can relate. My five-year-old laptop is on the verge of death and I would probably take care of it if we had an Apple store.

2. Portillo's

This Italian beef and hot dog chain is native to Illinois, so maybe I only want it because I used to live there, but trust me, we need one. The food is so good, and it's home to the famous chocolate cake shake. You heard me right — an actual chocolate cake blended into a shake. Plus, their chopped salad is the only salad that I've ordered because I actually wanted it...not because I was feeling bad about my diet.

3. IKEA

Who doesn't want to explore a giant furniture store while eating Swedish meatballs? I know I do. Unfortunately, I've never gotten to do that, because we do not have an IKEA in Northern Colorado. Their only Colorado location is south of Denver, which isn't that far, but...come on, IKEA, work with me here.

4. Denver Biscuit Co.

Before you argue that Fort Collins already has enough brunch places, I would counter your argument by saying that you can never have enough brunch places. Their fluffy biscuits, topped with everything from apple butter and eggs to shrimp and grits, are to die for. They're also a great hangover cure, but I already know that no one's driving to Denver if they're hungover.

5. Urban Outfitters

We don't really have a shopping scene here in Fort Collins, and even the one in Loveland isn't that extensive (sorry, Centerra) — especially if you're trying to stay trendy in this college town. A fun, fashionable store like Urban Outfitters is exactly what Fort Collins needs. I just want to find one cute jumpsuit that fits me. Is that too much to ask for?!
