Wyoming-Based Mexican Spot Brings First Great Location to Colorado

It's great when Northern Colorado, as opposed to Colorado Springs, gets to be the first to have the "first Colorado location" of a store or chain. This small Mexican restaurant chain out of Wyoming is very small: There are now a whopping two.

Who is Fernandito's Mexican Grill Now in Wellington, Colorado?

Fernandito's Mexican Grill's first location, in Laramie (just north of the Highway 287 and I-80 interchange,) has been around for several years. They have a great location and a great location in Wellington, off of I-25, on 6th Street, near the Wellington exit. They'll see a lot of highway traffic stopping, as well as locals.

It was in early 2026, that we let you know that Fernandito's would be taken the place of what was the town's Taco John's. While Taco John's is also from Wyoming, and has a following, they moved their headquarters to Minnesota and many have closed. Expanding to Wellington could be just the beginning of a new Wyoming-based empire.

How Far Apart Are the Wyoming and Colorado Fernandito's?

Being about an hour (61 miles) away from headquarters, the Wellington location of Fernandito's in good shape, when it comes to getting what supplies may be needed and for if upper-management needs to come down. Add in, how Wellington is always growing and making things nicer and nicer, it's a great place to stop for some Mexican food.

I stopped into the Wellington Fernandito's (just north of the Quality Inn & Suites) soon after they opened, and was blown away; clearly, the brought their experience from Wyoming with them. I had a two-taco plate (lengua and chicken) and it was great. I was also introduced to complimentary sliced cucumbers for palette-cleansing; it was fun.
