It sounds weird, and probably pretty gross to a lot of people, but it's been found that more than 80 percent of the world's population actually indulges in insects as part of their daily meals. While serving up bugs isn't quite as common in Western culture, there is a bistro here in Fort Collins that does give diners the opportunity to try it out.

Besides offering a variety of delicious cheeses, meats, and other small bites on their menu, The Welsh Rabbit also has a dish called the "Cricket Curious" available to their customers. For $2.50, the small dish is perfect for someone who just wants to dip their toes into alternative proteins – or for those who maybe just want an Instagramable moment. Chef Nate at The Welsh Rabbit also highly recommends the soft sheep cheese rolled in black ants. And hey, if you end up not liking it, at least there is good wine to wash them down.

In the past, the Old Town restaurant had a different dish of crickets, and when ordered, proceeds went to an organization called Farms For Orphans. Due to logistical challenges and also because it wasn't ordered often enough, the bistro pulled it from the menu, but say they hope to revive it in a safer form eventually. Besides that, The Welsh Rabbit has also hosted a special 5-course bug dinner with proceeds going towards FFO. For those who are interested, Chef Nate said they will be trying this again in the fall or late winter.

Throughout the past three to four years, the restaurant has experimented with everything from three different types of crickets, locust, meal worms, ants, silk worms and scorpions. For the most part, they have all been sourced through Rocky Mountain Micro Ranch out of Denver.
